Chicken Seasoning

This is my family’s go to chicken seasoning for anything chicken!  I use it frequently on our Sunday Roast Chook Night and my family and I just love it.

So let me put this put there…for me…chicken has no taste.  Its bland, its boring.  I sort of think that chicken is just texture, with nothing behind it.  However, once a chicken is seasoned, well that’s when magic happens.  

The history of chicken seasoning is impossible to find.  I’m going around and around in circles; I almost feel like I am chasing my tail.  I cannot get any answers.

I came up with this seasoning literally whilst I was preparing our Sunday Roast Chook Night a few years back and it’s my go to for anything chicken.  I love its flavours and the simplicity of the ingredients.

There are many, many chicken seasoning recipes out there.  I found that a lot contained cayenne pepper.  I recall adding cayenne pepper, but the peppery flavour was too overpowering and too intense.   

Our Chicken Seasoning is fragrant, smoky yet sweet.  The blend of all the herbs and spices used seriously infuse a massive burst of flavour.

The best way to use our Chicken Seasoning…grab that chook, and with paper kitchen towel dry the skin and then dry it some more and then again.  You want the chicken to be as dry as The Sahara. Then rub a little bit of olive oil all over the chook (no need to over saturate the chook) and then with clean hands use our Chicken Seasoning and rub it into the chook.  

I would highly recommend that you pop that chook in all its heavenly seasoning into the fridge to marinade for 30-60 minutes.  Then pop it into the oven and I guarantee you your kitchen is going to smell heavenly as the chook cooks.

I use our Chicken Seasoning the same way for chicken thighs, chicken breast, chicken drumsticks.  Our Chicken Seasoning is perfect for any cut of chicken, and it’s designed to be generously applied.  It’s gorgeous on a good piece of salmon fillet/salmon steak.  I made oven baked pork chops with our Chicken Seasoning, and I also sprinkled some of the seasoning on the roast potatoes and it was outstanding!  I don’t eat duck, but I feel that this seasoning would work well on duck.  

It’s gorgeous when added to soups, popcorn, homemade pasta sauce, there are serious so many uses for this seasoning. 

A good rule of thumb is using 1 heaped tablespoon to 500 grams of protein of choice.
