Zoitsa Homely Produce would love to debut our adaption and interpretation of It’s NOT KFC Seasoning.
A few months back The Hubster (aka – my husband) set me a challenge of either trying to duplicate or come close to making a KFC like seasoning. So, the challenge was set and come hell or high water I was accepting it and I was going to try my darndest to replicate it as best as I could.
To say that this seasoning blend almost killed me would be the understatement of the year! Personally, if I never ate KFC again, I would not be perturbed in the slightest. I was eating the stuff almost weekly (so I could compare my seasonings with the original) and I could feel my arteries starting to thicken up and the weight I had lost was quickly and I mean quickly piling back on. May I never eat greasy food again. Bleurgh!
Usually, I don’t mind KFC but in very small doses. As I have aged, I found myself only eating fast food or take away food every few months or so. It just doesn’t appeal to me. In our family when they want Fast Food Friday you will find me eating sushi whilst they binge on fast food. By no means am I a healthy eating, clean eating, only organic eating woman. I like the occasional take away, but sushi is usually my go to for “take away”.
I digress (I have a tendency of rambling so my apologies) …I stood in my kitchen with pen and paper in hand making countless versions of the seasoning. Massive fails! Massive disappointment! I have spent HOURS online looking for recipes. I have been to my local library at every free opportunity I had going through cookbook, after cookbook after cookbook.
There are so many recipes for copycat KFC seasoning, each only claiming that they have cracked the KFC code and have replicated it. Yeah. Nah. These 11 secret herbs and spices had me throwing my arms in the air out of sheer exasperation and I hate to admit this out aloud but… defeat.
I’m usually not a quitter. No Siree! I am a fighter and for those who know me they know what a determined, headstrong, stubborn chick I am. No is never the end of a discussion with me, but this seasoning had me shelving it for weeks and weeks as it had me feeling defeated and deflated. Something just wasn’t right with this seasoning. I couldn’t quite put my finger on it.
I was utterly baffled and confused with the ingredients. I could taste pepper but was it black pepper or white pepper? Was it garlic salt or garlic powder? There are distinct “flowery” herbs but were they dried sager or dried marjoram or dried oregano? I was going bonkers!
Yesterday I pulled my out my notes and spent 9 hours making different versions yet again and then I cooked with it. I used our version on chicken drumsticks (which I oven baked rather fried) and I also used it with a piece of Blue Grenadier fish, and I was euphoric with the results!
There is not only 11 secret herbs and spices in our version of It’s NOT KFC Seasoning there are a lot more herbs and spices, but having said that I reckon I have duplicated the original recipe as best as I could. We add NO flour in this mix, this is JUST the seasoning. The best way to use it is to place 1 and ½ cups of plain flour/flour of choice to 2 tablespoons of our It’s NOT KFC Seasoning into a bowl and whisk/mix to combine. Then dip your chicken pieces or fish into buttermilk (trust me it is sooo much better with buttermilk rather than egg) and then dip into your flour mixture. Then either pan fry, deep fry, or oven bake.
Our It’s NOT KFC Seasoning is truly scrumptious. There is a very close taste to the original secret herbs and spices of KFC but it is not the exact same. To say it’s the exact same would be completely dishonest. I reckon we got close to it though.
