Zoitsa Homely Produce would like to introduce you to our Rustic Spice Mix for Bread Baking.
One of my favourite times of the year is Autumn. Autumn (Fall) is known as the “transition months” or the prelude to Winter. I just LOVE Winter.
Down Under, in the Southern Hemisphere the temperature is dropping, the leaves on the trees are staring to change colour before they fall to the ground, the days are getting shorter. Which means only one thing in my household…. it’s time for soup and bread baking time.
I love to bake and especially so this time of the year. I love making loaves of bread, but my favourite is making Rustic Bread.
Rustic Bread is unrefined and simple, yet oh so warm and inviting. Rustic Bread is a roughly shaped bread and bread that’s not baked in a loaf tin/pan. Rustic Bread is ideally only made of yeast (or Sourdough starter) flour, salt and water and it must have an “imperfect” look to the loaf. This type of bread is usually baked at a higher oven temperature which results in a thicker crust.
So, a few years ago when I was in a “bored outta my mind” moment, I started to play around with herbs, and I came up with our Rustic Spice Mix.
Our Rustic Spice Mix is packed with caraway seeds, coriander seeds, cumin seeds, fennel seeds, the seeds from star anise, black peppercorns. The caraway seed aroma is rather dominant in this mix. Its sweet, spicy, herbaceous, and fruity. Just bewitching!
I use the mortar and pestle to mill the herbs. By pestling the ingredients, they are “crushed” with a lower energy, and they will not “warm up” and release their full flavours. I do this so that when you sprinkle some of our Rustic Spice Mix on top of your uncooked loaf the flavours and aromas will “release” in the hot oven.
Our Rustic Bread Mix gives your loaves of bread a strong, rich, hearty flavour. It really does amp up the taste of your loaf. It turns the loaf into a loaf full of robust flavours.
