If you’ve been reading our blog posts, you will know that I have been researching and reading up a lot about Creole and Cajun foods. It’s safe to say this “genre” of foods is really starting to grow on me.
Cajun food has been around for quite a few centuries. Cajun cuisine is well known for its spicy notes and its robustness. An interesting fact was that Cajun Rub/Seasoning was originally made to make game meats like alligator tastier.
Our version has sea salt, chilli powder, smoked paprika, dehydrated onion, granulated garlic, cumin, thyme, basil, oregano, coriander and black pepper, white pepper, and cayenne pepper. It’s packed with spice thanks to all the peppers that we have added. There’s a compound in pepper called “piperine” which is responsible for peppers spicy heat.
Being that it is considered spicy there is an element of heat that slowly permeates but it’s not a heat that’s going to blow your socks off. I would say it’s a mild to medium heat, and it’s very well tolerated in my home.
Our Spicy Cajun Rub is one that I have used for a good 10 years. It’s come out of my archives. It’s smoky, savoury, aromatic, peppery, slightly spicy, and full bodied.
Our Spicy Cajun Rub is all natural and free from any nasties and chemicals. It’s extremely versatile (like a lot of our products). I like to make blends that have more than one purpose. Nothing irritates me more than buying a blend and only having one use for it. So having said that our Spicy Cajun Rub can be used as a dry rub, made into a paste by adding some olive oil (1 tablespoon of rub to 2 tablespoons of olive oil), sprinkle some in dips (to die for in Hummus), a sprinkling on eggs, potatoes, vegetables, chicken, meats, seafood, tofu, pasta…. just to give you a few suggestions.
As we always say…we add NO nasties. NO Chemicals. NO anti-caking agents. NO weird chemical additives. NO fats, NO oils, NO sugars, NO thickeners, NO preservatives.
