We all know that a steak needs your everyday salt and pepper but why not elevate it and add a real impact. A real WHAM! BAM! KABOOM!
I recently sent The Hubster out to our local butcher, and he came home with a grin when he placed rib eye steaks on the benchtop. I remember feeling rather perplexed as I am not a fan of red meat (no I’m not vegan…I just don’t usually crave meat and big slabs of red meat at that). He keeps threatening me with coming home with Tomahawk Steaks, I have everything crossed that he won’t! (Dear God, have you seen the size of them!@$#$%)
I personally find steaks a tad on the boring side. In a perfect world I’d be happy to just sit there and eat the sides and salads that one usually serves with steak. As to not break his heart I decided to play around in the kitchen and make a spice mix to compliment the steak and that my friends is how our Steak Spice came to fruition.
Our Steak Spice, I assure you, will complement your steaks and it won’t overpower your steak. We have added some gorgeous savoury “elements” to this spice mix that will really balance out your steak. We have added paprika which I feel makes the steak taste like it was cooked on a barbie. A smoky element to it, I guess.
Our Steak Spice has sea salt, onion powder, garlic powder, mild paprika, celery seeds, black pepper, Rapadura sugar (for caramelization) rice flour (milled by yours truly – we avoid pre-packaged stuff as much as we can) nutmeg, coriander, thyme, and rosemary
The taste is…salty and savoury, with a little kick of pepper and then a robust herby flavour. The volatile oils which are found in dried herbs really become more concentrated and especially so in this spice mix.
When applying our Steak Spice to your steak the best way would be to season it a little bit to start with. When I say a little bit, I would go for 1 tablespoon per steak.
Having said that if you are like me and really want flavour on your steaks, I tend to be more liberal with it and I tend to cover the entire surface of the steak so that the seasoning can really carry through with each and every bite. I like to press the spice mix onto the meat using my hand (as this helps with the spice mix sticking on to your meat), alternatively you can lightly rub the Spice Mix all over your steak.
Once your steaks are seasoned to your liking then proceed to cooking your steak. Our preferred method at home is called the Reverse Sear Method. I believe that this technique or method will render the perfect steaks each and every time.
A little bit about Reverse Sear Method for those that may not be familiar with it. This method of cooking steaks essentially is by starting to cook your steak with a low and slow approach. Most steaks are cooked usually using one appliance be that be your barbie, the grill, the oven, or a cast iron skillet/frypan.
Nonetheless, the Reverse Sear Method involves cooking the steak on a very low heat in the oven. By cooking it in the oven the meat cooks evenly and it is velvety silky soft on the inside. You then take it out of the oven and then sear the steak in a cast iron skillet/frypan to create a dark, crispy crust.
If using a thin steak, then I recommend to not use this method as it will dry it up and it will be flavourless and impossible to chew.
I leave you with this: you can always ADD more seasoning easier than you can remove it! When using our Steak Spice add a little and then adjust accordingly.
